Chestnuts are the fruit of the sweet chestnut tree, which is edible when cooked. They are energy-rich and highly nutritious, yielding 199-307 Cal per 100 g depending on the variety. They contain a high proportion of starch, together with potassium and vitamins B and C.
Whole chestnuts can be roasted in their shells, then peeled and eaten as they are. Alternatively, they may be peeled and preserved, frozen, or pureed, with or without sugar added. Whole Marrons are cooked and preserved in sugar and eaten as a sweetmeat (Marrons glaces). Peeled chestnuts can be boiled, grilled (broiled), braised, or cooked in butter or milk for use as a garnish or vegetable. Pureed chestnuts are also used as a garnish, and are an ingredient of various stuffing's. Chestnuts are also used for making sweet desserts and play an important role in the patisserie and confectionery industries
